Ingredients:

  • 2 1/4 c. almond flour
  • 1/2 c coconut flour
  • 1/2 c. cocoa powder
  • 1/2 tsp. ground cardamom
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. fine sea salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 3/4 c. dark brown sugar or allulose + some molasses
  • 3/4 c unsalted butter, softened
  • 2 large Eggs
  • 1 tsp vanilla

Directions:

  1. Cream together butter and sugar, add eggs, vanilla and mix well
  2. In a separate bowl, combine almond flour, cocoa, spices, baking powder and soda. with the mixer running on low, add the flour mixer in 3 or 4 pieces
  3. form the dough into a ball and refrigerate for at least 30 minutes
  4. preheat oven to 350F, line 2 baking sheets with parchemant
  5. spread coconut flour on a flat surface, and roll the dough out until it is 1/4in / 5mm thick - it might be easier to put it on parchment, or use two layers of parchement
  6. cut cookies out and place on the baking sheets. If the dough gets too warm to work with, chill again.
  7. bake for 13-15 minutes
