Ingredients:
- 2 1/4 c. almond flour
- 1/2 c coconut flour
- 1/2 c. cocoa powder
- 1/2 tsp. ground cardamom
- 1/2 tsp. ground cinnamon
- 1/2 tsp. fine sea salt
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 3/4 c. dark brown sugar or allulose + some molasses
- 3/4 c unsalted butter, softened
- 2 large Eggs
- 1 tsp vanilla
Directions:
- Cream together butter and sugar, add eggs, vanilla and mix well
- In a separate bowl, combine almond flour, cocoa, spices, baking powder and soda. with the mixer running on low, add the flour mixer in 3 or 4 pieces
- form the dough into a ball and refrigerate for at least 30 minutes
- preheat oven to 350F, line 2 baking sheets with parchemant
- spread coconut flour on a flat surface, and roll the dough out until it is 1/4in / 5mm thick - it might be easier to put it on parchment, or use two layers of parchement
- cut cookies out and place on the baking sheets. If the dough gets too warm to work with, chill again.
- bake for 13-15 minutes
